This year we had low rains thus obtaining very healthy bunches. Besides, the cool nights and mild day temperatures on the last weeks of the cycle were excellent for a thorough ripening of the grapes, which were full of nuances. The grapes for this wine come from old low-yield vines and were harvested by hand in small boxes.

Following manual selection, the grapes were destemmed, crushed and the must underwent cold maceration at 8º C for eight days prior to fermentation, which took place in open fermenting vats with a 2,000 litre capacity at a maximum of 26º C. The total maceration period lasted approximately 23 days. Manual batonnage is carried out three times a day.

This wine was aged in new French oak barrels for 18 months, followed by another 12 months minimum in the bottle.
