Vintage

2021 began with a good rainfall but that at the end of winter came a prolonged period of drought until well into September. In general terms it has been a dry year that has favored the health of the vineyard, reducing the number of phytosanitary treatments due to the excellent condition of the grapes. The harvest in terms of quantity is very similar to that of 2020 and even slightly higher, favored in some vineyards by the precipitation at the end of September. These climatic conditions have caused the harvest to come about 10 days later than the 2020 harvest, obtaining warmer wines, with less acidity than other years but with a very remarkable colorimetric potential, making powerful and structured wines. They are wines slightly less aromatic due to the heat but they gain in color and structure.

Winemaking

Manual harvest and after a careful selection, upon entering the winery the grapes are destemmed. It is subsequently stored in small 2000 L tanks, where it macerates cold at 8 ºC for 4 days. Alcoholic fermentation is induced with selected yeasts and involves exhaustive temperature controls. Pigeage is done manually 3 times a day to submerge the hat. Once fermentation is complete, the wine macerates until the winemaker determines the appropriate extraction of polyphenols. The wine is aged for 15 months: 20% of the blend in terracotta amphorae, and the remaining 80% in barrels (80% French oak, 20% American, half new and the other half single-use).

Aging

It takes place in the same barrels for 15 months, with the wine racked every 5 months.

Tasting notes

Colour

Clean and brilliant, intense cherry red colour with a garnet rim.

Nose

Complex and powerful with ripe fruit very well integrated with oak and mineral nuances.

Mouth

Very powerful toasty notes (cocoa and coffee) of high quality wood, perfectly blended with ripe fruit. Good acidity ensures that the wine is fresh and drinkable.

Pairing

Recommended for red meats, meat with sauce, game and game dishes with sauce and ripe cheeses of all types.
