Grapes were generally very healthy, more concentrated in flavour and more balanced alcohol compared to other areas of lower altitude. Grapes come from vineyards in Toledo of an average age of 40 years, they express the terroir thanks to their adaptation to the soil over a long period. The soils are calcareous-clay and the Tempranillo grapes usually mature first and the others later, grapes are picked by hand.


65% Tempranillo, 35% Merlot. Upon inspecting the quality of the grapes, they are de-stemmed, crushed and pre-macerated at 15ºC for 24 hours. They are later fermented and macerated over 10 days at a constant 25º C.


This wine is aged in for 12 months in American oak and French oak 225l barrels before being clarified and bottled. It is then let to rest in bottles for a minimum of six additional months before being released.


Colour: Dark cherry colour with a surrounding outline of cherry red.
Nose: It shows a balanced nose, with pleasant toasted notes. Clean aromas of cherry, plum, raisin, bay leaves and eucalyptus.
Palate: On the palate it is silky, with ripe fruit flavours along with notes of spices, coffee, and a bit of vanilla and cinnamon. The tannins melt and the finish is persistent.
Food matches: Combines with roast meats and stews, legumes and ripe cheeses.
