The altitude of the vineyards (900 m+) helps to obtain optimal ripening of the grapes and good polyphenol levels and low yields. The vineyards are an average of 80 years old, with a thin, unfertile organic topsoil with limestone rock underneath and situated in the area of La Revilla, Santa María, El Obispo y El Buey.
90% Tinta Fina (Tempranillo), 5% Cabernet Sauvignon and 5% Merlot. Grapes went through a double selection, first in the vineyard and then on the winery’s selection table. A pre-fermentative maceration is carried out at a low temperature for five days to ensure an excellent extraction of aromas. Alcoholic fermentation is followed by maceration with the skins in order to round-out the wine further still.
The wine is aged for 12 months in French oak from Allier, Bosgues, Nevers, Tronçais and Bertranges. Then it is racked four times before being bottled, where it is kept for a minimum of 9 months.
Colour: Intense cherry red with some purplish hues. Excellent brightness.
Nose: Very complex, the sensation of fruit dominates and there is a blend of violet and white flower aromas. Noble wood aromas are perfectly integrated and complete this excellent range with reminiscences of cocoa and coffee, vanilla and some toasted notes.
Palate: In the mouth it displays fruit, roundness and a balanced acidity. A sound tannin structure provides character and body, though as a whole it remains refined and gentle.
Food matches: Ideal for rice dishes with vegetables, red meat, rich fish dishes and semi-cured cheeses.
